When you don’t have any side dishes in the fridge and aren’t starving, but still want something delicious, this is what I whipped up! It’s a delightful summer dish that’s both easy and incredibly refreshing. The perfect way to beat the heat!
Main Ingredients
- 2 servings of Somyeon noodles (approx. 200g)
- 2 packs of Naengmyeon broth (cold noodle soup broth)
- Generous amount of well-fermented Yeolmu Kimchi (young radish kimchi)
- 2 Eggs
Cooking Instructions
Step 1
First, let’s prepare the somyeon noodles, the base of our dish. Bring a large pot of water to a rolling boil. Once boiling, add the somyeon noodles and cook for about 3-4 minutes until they are perfectly chewy. Rinse the cooked noodles thoroughly under cold running water to remove excess starch, then drain them well in a colander.
Step 2
Boil the eggs to have them ready as a topping. Place the eggs in boiling water and cook for about 10-12 minutes for a hard-boiled consistency. Once boiled, cool them in cold water and then peel.
Step 3
Prepare the star of the dish: well-fermented Yeolmu Kimchi! Choose kimchi that isn’t too spicy and has a nice, crisp texture, as it pairs wonderfully with the noodles. Adjust the seasoning of the kimchi to your preference.
Step 4
To create the flavorful broth, strain the liquid from the Yeolmu Kimchi through a sieve, keeping only the clear liquid. You can set aside the kimchi pieces to use as a topping, or mix them in directly.

Now, let’s make that refreshing and savory broth! Combine the strained Yeolmu Kimchi liquid with 2 packs of the store-bought Naengmyeon broth. Taste and adjust the ratio of Yeolmu Kimchi liquid to Naengmyeon broth, aiming for about a 2:1 ratio. If it’s too bland, season with a little salt or soup soy sauce. For the best flavor, make sure the broth is thoroughly chilled in the refrigerator.

Place the drained somyeon noodles neatly into your serving bowl. Gently loosen the noodles to arrange them attractively, making the dish look even more appealing.

Arrange the prepared Yeolmu Kimchi and the halved hard-boiled eggs as toppings on top of the noodles. Make it look as good as it tastes!
