Step 1

Today, we’re going to make a delicious perilla leaf stew that anyone can easily follow. We’ll use the microwave to shorten the cooking time, and the result will be a magical side dish where the aromatic perilla leaves and the savory seasoning blend perfectly, making you finish a bowl of rice in no time. I’ll explain in detail so you can enjoy it tender and delicious!

Step 2

First, wash the perilla leaves thoroughly under running cold water. It’s best to wash them meticulously, leaf by leaf, after removing any dirt or dust. After washing, drain the leaves well in a colander to remove excess water. If water remains, the seasoning might become too diluted. Now it’s time to make the seasoning sauce. In a bowl, combine 1/2 cup (100ml) water, 2 Tbsp soy sauce (30ml), 2 tsp gochugaru (5g), and 1 tsp sugar (5g). Mix well. Finely julienne or mince the carrot and thinly slice the green onion, then add them to the seasoning sauce. This completes our delicious perilla leaf stew seasoning!

Step 3

Now, let’s spread the seasoning onto the perilla leaves. Prepare the perilla leaves by stacking 3 to 4 leaves at a time. Spread the prepared seasoning evenly on one side of the stacked leaves using a spoon. It’s important to spread the seasoning thoroughly so it seeps well between the leaves. Stack another 3 to 4 perilla leaves on top of the seasoned ones and apply the seasoning in the same way. Repeat this process until all the perilla leaves are used. Layering the leaves like this is the key to this recipe.

Step 4

Once you’ve spread seasoning on all the perilla leaves and stacked them, you’ll have a nearly completed structure. If there’s any leftover seasoning, lightly drizzle it over the top of the stacked leaves. This ensures the seasoning is evenly distributed throughout the leaves, making it even more delicious.

Step 5

Now it’s time to cook using the microwave. Cover the container with the perilla leaves tightly with plastic wrap. To prevent the wrap from ballooning and to allow steam to escape, poke 2-3 holes in the wrap with a chopstick or toothpick.
