Main Ingredients
- 2 cups well-fermented ripe kimchi (approx. 200g)
- 80g pork shoulder or neck (cut into bite-sized pieces)
- 1/2 medium potato (peeled and sliced)
- 1 stalk green onion
- 2 Korean green chili peppers (cheongyang peppers)
Cooking Instructions
Step 1
Prepare all the ingredients for a delicious kimchi stew. Tear or chop the kimchi into manageable pieces and cut the pork into bite-sized portions.

Slice the green onion diagonally and finely chop the Korean green chili peppers. Peel the potato and cut it into half-moon shapes about 0.5cm thick, or into your preferred bite-sized pieces.

Heat a pot over medium heat and add 3 tablespoons of sesame oil. Add the prepared kimchi and sprinkle with 0.5 tablespoon of brown sugar to soften its sourness, then stir-fry until the kimchi is slightly wilted. Add the pork and cook until it loses its pink color. Then, stir in 1 tablespoon of soy sauce for soup and 1 tablespoon of cooking wine, and continue to sauté until the pork is lightly browned to enhance its flavor.

Pour 300ml of rice water (or plain water) into the pot with the stir-fried kimchi and pork. Add the sliced potatoes; they will soften and add more depth to the broth.
