Main Ingredients

  • 500g pork shoulder
  • 1/2 onion
  • 250g cabbage
  • A little carrot (about 1/4)
  • 2 shiitake mushrooms
  • 1 green onion

Stir-frying Seasoning & Ingredients

  • 2 Tbsp soju (or cooking wine)
  • 2 Tbsp sugar
  • 100ml water
  • 1 Tbsp sesame oil
  • A little sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the vegetables for the duruchigi. Feel free to use whatever vegetables you have on hand! Slice the onion and cabbage into bite-sized pieces. Thinly slice the carrot, and remove the stems from the shiitake mushrooms before slicing them. Slice the green onion diagonally.

Step 1

Step 2

Pat the pork shoulder dry with paper towels to remove any excess blood. This helps to eliminate any gamey smell and ensures a cleaner flavor. Cut the pork into pieces that are slightly larger than bite-sized.

Step 2

Step 3

Now, let’s make the delicious duruchigi! First, combine all the sauce ingredients in a bowl and mix well to create the marinade. Since we’ll be stir-frying directly without marinating the meat separately, preparing the sauce in advance will save you cooking time.

Step 3

Step 4

Heat a large pan over medium heat and add a generous amount of cooking oil. Add the sliced green onions and stir-fry until fragrant. Cooking the green onions first releases their aroma, significantly enhancing the dish’s overall flavor.

Step 4

Step 5

Once the green onions are fragrant, add the prepared pork shoulder to the pan and stir-fry over high heat. It’s best to keep stirring the pork to prevent it from clumping together.

Step 5

Step 6

While stir-frying the pork, add 2 tablespoons of soju to help eliminate any gamey odors. Once the pork is no longer pink and is partially cooked, add 2 tablespoons of sugar and stir-fry evenly to dissolve the sugar. This step adds a subtle sweetness to the meat, making it even more delicious.

Step 6

Step 7

When the pork is about 70-80% cooked, add all the prepared vegetables (onion, cabbage, carrot, shiitake mushrooms) to the pan and stir-fry together. Continue to cook until the vegetables are slightly tender.

Step 7

Step 8

Now, add all the pre-made sauce and 100ml of water. Mix everything well to ensure the sauce coats the vegetables and meat evenly, and continue to stir-fry. Stir-frying over high heat for a short time prevents excessive liquid from forming and allows the flavors to meld beautifully.

Step 8

Step 9

Once all ingredients are cooked through and the sauce has thickened slightly, drizzle in 1 tablespoon of sesame oil and turn off the heat. Adding sesame oil at the end enhances the nutty aroma.

Step 9

Step 10

Transfer the finished Pork Duruchigi to a serving plate, piling it high. Sprinkle with sesame seeds for garnish, and your delicious Pork Duruchigi is complete! Enjoy it with a side of warm rice.
