Cooking Instructions
Step 1
First, prepare the vegetables for the duruchigi. Feel free to use whatever vegetables you have on hand! Slice the onion and cabbage into bite-sized pieces. Thinly slice the carrot, and remove the stems from the shiitake mushrooms before slicing them. Slice the green onion diagonally.
Step 2
Pat the pork shoulder dry with paper towels to remove any excess blood. This helps to eliminate any gamey smell and ensures a cleaner flavor. Cut the pork into pieces that are slightly larger than bite-sized.

Now, let’s make the delicious duruchigi! First, combine all the sauce ingredients in a bowl and mix well to create the marinade. Since we’ll be stir-frying directly without marinating the meat separately, preparing the sauce in advance will save you cooking time.

Heat a large pan over medium heat and add a generous amount of cooking oil. Add the sliced green onions and stir-fry until fragrant. Cooking the green onions first releases their aroma, significantly enhancing the dish’s overall flavor.

When the pork is about 70-80% cooked, add all the prepared vegetables (onion, cabbage, carrot, shiitake mushrooms) to the pan and stir-fry together. Continue to cook until the vegetables are slightly tender.
