Main Ingredients
- 2 Duck legs (boneless, skinless, and finely chopped)
- 1/2 Onion (finely diced)
- 1/2 cup Pineapple (finely chopped)
- 1/2 Red bell pepper (finely diced)
- 2 handfuls Bean sprouts (rinsed)
- A little blanched broccoli (chopped)
- A little fresh cilantro (for garnish)
- 1 Egg
Marinade and Seasoning
- 1 Tbsp Soju (for tenderizing and removing odor)
- 1 Tbsp Soy sauce
- 1 Tbsp Fish sauce
- 1/2 Tbsp Minced garlic
- 1/2 tsp Ginger juice (or grated ginger)
- A pinch of Black pepper

Cooking Instructions
Step 1
First, debone and remove the skin from the duck legs. Chop the duck meat into small, bite-sized pieces. In a bowl, combine the chopped duck with 1 Tbsp soju, 1 Tbsp soy sauce, 1 Tbsp fish sauce, 1/2 Tbsp minced garlic, 1/2 tsp ginger juice, and a pinch of black pepper. Mix well and let it marinate for about 10 minutes. If you don’t have ginger juice, a small amount of grated fresh ginger can be used.
Step 2
Peel and finely dice the onion. Heat a pan over medium-high heat. Add the marinated duck meat and stir-fry until it starts to brown. Add the diced onion and continue to cook with the duck until the onion turns translucent.
Step 3
Once the duck has turned a nice brown color, add the finely chopped pineapple to the pan. Stir-fry for another 1-2 minutes, allowing the sweet and tangy pineapple to meld with the duck.
Step 4
Push the duck and pineapple mixture to one side of the pan. Crack the egg into the empty space and scramble it until cooked through. Break it up into small pieces with your spatula.
Step 5
Mix the scrambled egg with the duck and pineapple. Add 1 bowl of cooked rice (about 200g) to the pan. Break up any clumps of rice and stir-fry everything together until the rice is well-coated and heated through, ensuring it’s not sticky.
Step 6
Finely dice the red bell pepper. Add the diced bell pepper to the fried rice. Stir-fry quickly over high heat for just about 30 seconds to a minute, tossing to combine. This will keep the bell pepper crisp and vibrant.
Step 7
Turn off the heat. Add the rinsed bean sprouts and the blanched, chopped broccoli to the pan. Gently toss everything together using the residual heat. The goal is to slightly warm them through while retaining their crisp texture.
Step 8
For a beautiful presentation, you can hollow out a fresh pineapple half to use as a serving bowl. Carefully spoon the finished fried rice into the pineapple shell. This adds a tropical flair to your dish.
Step 9
Garnish the fried rice with fresh cilantro leaves and arrange the cooked broccoli pieces on top. The fresh herbs add a burst of aroma and flavor, making the dish visually appealing.
