Ingredients
- 1 eggplant
- 1/2 cup water (approx. 100ml)
- 2 tsp soy sauce
- 1 tsp gochugaru (Korean chili flakes)
- 1 tsp sugar
- 1 tsp toasted sesame seeds
- 1 handful green onions, chopped
- 1 chili pepper, chopped (optional)
- 1 tsp sesame oil
Cooking Instructions
Step 1
This eggplant dish is a lifesaver on busy days, as it doesn’t take much time to prepare! Eggplant is considered a ‘black food’ and is so nutritious. Let’s get started on this delicious grilled eggplant recipe.
Step 2
Slice the eggplant into rounds of about 1 cm thickness. Aim for a consistent thickness so they cook evenly. If they are too thin, they might break apart easily.
Step 3
Line a piece of parchment paper onto your air fryer basket or baking sheet. Arrange the eggplant slices in a single layer, making sure they don’t overlap. This ensures even cooking and prevents steaming.
Step 4
Air fry at 180°C (350°F) for about 8 minutes. (If using an oven, preheat to 180°C/350°F and bake for 8-10 minutes). The eggplant should be tender and slightly golden. Adjust cooking time based on the thickness of your eggplant slices and your appliance.
Step 5
While the eggplant is cooking, prepare the sauce. In a small bowl, combine 1/2 cup of water, 2 tsp soy sauce, 1 tsp gochugaru, 1 tsp sugar, the chopped green onions, the chopped chili pepper (if using), and 1 tsp sesame oil. Whisk everything together until well combined. Drizzle this flavorful sauce over the grilled eggplant.
Step 6
And there you have it! A simple, healthy, and delicious ‘black food’ grilled eggplant dish is complete. Enjoy this delightful way to eat eggplant, perfect as a side dish or a healthy snack.
