Main Ingredients
  • 1 bowl of pre-cooked rice (warm it up)
  • 1 handful of green onions (finely chopped)
  • 200g of sliced kimchi (chop into bite-sized pieces)
  • 2 mini lunch packs of roasted seaweed (crumble into small pieces)
  • 1 handful of mozzarella cheese (adjust to your preference)

Seasoning
  • 1 Tbsp sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp fine chili powder

Cooking Instructions

Step 1

First, prepare the green onions for making green onion oil. Finely chop them into about 1cm pieces. The fragrant aroma of the green onions will add depth to your dish.

Step 2

Finely chop the kimchi into bite-sized pieces. Using scissors makes chopping easier and neater. The kimchi’s tanginess will blend perfectly with the rice for an amazing taste.

Step 3

Cut the mini lunch packs of roasted seaweed into small pieces with scissors. The crispy seaweed flakes will further enhance the flavor of the finished kimchi fried rice.

Step 4

Heat a generous amount of olive oil in a wide frying pan. Add the chopped green onions and stir-fry over low heat until they turn a light brown color and release their fragrant oil. Slowly sautéing them is key.

Step 5

Once the aroma of the green onion oil rises and the onions are golden brown, add the prepared kimchi and stir-fry together. Keep stirring with a spatula to prevent the kimchi from sticking to the pan.

When the kimchi has slightly softened, add 1 Tbsp of sugar, 1 Tbsp of soy sauce, and 1 Tbsp of fine chili powder to the sides of the pan. Stir-fry everything together until the seasonings are well incorporated into the kimchi.

Spread the mixed rice thinly in the frying pan. Sprinkle mozzarella cheese generously over one half of the rice. This is the crucial step! Make sure to turn the heat to ‘very low’. Cover the pan with a lid and let it cook for about 3 minutes, or until the cheese is melted and slightly golden. Be careful not to burn the rice by using a very low heat setting.

Step 9
