Cooking Instructions
Step 1
First, prepare your vegetables. Finely dice the onion, and chop the bell pepper into similar-sized pieces. Slice the scallions thinly, and finely mince the chili pepper (removing seeds if you prefer less heat). Slice the garlic thinly.

Cut the smoked duck into bite-sized pieces, about 1.5-2 cm. Smoked duck releases its own fat, so you might not need extra oil, but if you desire richer flavor, feel free to add a little cooking oil to the pan.

Heat a pan over medium heat. Add the sliced garlic and minced garlic. Sauté until fragrant, being careful not to burn the garlic. This step is crucial for infusing the rice with a lovely garlic aroma.

Once the garlic is fragrant, add the cut smoked duck to the pan. Stir-fry until the duck is lightly browned. The duck will start to release its rendered fat, which adds wonderful flavor to the fried rice.
