Step 1

Step 2

The first step to a delicious Samgyetang is preparing the chicken. First, trim off the tail end of the chicken. This part contains a lot of fat, which can make the broth cloudy, so removing it cleanly is important.

Step 3

Next, look at the area between the chicken’s legs. There’s a significant amount of fat here. Thoroughly removing this fat will result in a cleaner, more savory Samgyetang.

Also, pay attention to and remove the smaller bits of fat attached to the sides of the chicken legs. Meticulous preparation, even for seemingly minor parts, greatly improves the broth’s flavor.

The neck area and the wings of the chicken are also fatty. It’s particularly important to remove the fat around the neck and the pancreas gland. The cleaner you prepare it, the clearer and less gamey the broth will be.

After removing excess fat, rinse the chicken thoroughly inside and out under running cold water. This step removes blood and any impurities, ensuring the chicken is prepared hygienically.
