Discover a recipe for a sweet and tangy fruit salad that will bring back fond childhood memories. I made this one afternoon while my husband and eldest were at a wedding, and my second child was home with me. While there are many dressings available today, mayonnaise was once considered the ultimate dressing for many of us during elementary school. This nostalgic dish feels perfectly suited for the deepening autumn season. The core ingredients for fruit salad are typically apples, tangerines, and bananas, but today I substituted bananas with kiwi since that’s what I had on hand. With three dressing options – mayonnaise, honey mustard, and ketchup – you can easily customize this salad to your family’s preferences right at home.
Fruit Salad Ingredients
- 1 Tangerine
- 1 Gold Kiwi
- 1 Red Kiwi
- 1/2 Apple
- Dried Cranberries, to taste
- 1/2 Cucumber
Cooking Instructions
Step 1
First, peel the tangerine. You can leave the thin inner membrane on; it adds to the flavor and texture. Separate the tangerine into segments. To avoid making the salad too watery from the juice, it’s best to keep the segments intact rather than cutting them in half.
Step 2
Peel one gold kiwi and one red kiwi. Cut each in half, and then into large, bite-sized pieces.
Step 3
Prepare half an apple. While leaving the peel on can evoke nostalgic memories, I find it can sometimes stick to the teeth. Since my child will be eating this too, I’ve peeled the apple completely, cored it, and then diced it into bite-sized cubes.
Step 4
Take half a cucumber and scoop out the seeds with a spoon. Then, dice it into similar-sized cubes as the apple. If you have raisins or dried cranberries, add them now for extra texture and flavor.
Step 5
Let’s make the basic dressing. In a bowl, combine 2 tablespoons of mayonnaise and 1 tablespoon of honey. Mix well. This base dressing will be used for about half of the salad ingredients. The remaining portion will be divided for the other two dressings. Mix half of your prepared fruit and cucumber with this mayo-honey dressing and set aside.
Step 6
Next is the red dressing. To the portion of salad set aside, add 0.5 tablespoon of ketchup and gently toss. This adds a lovely red hue and a tangy flavor, reminiscent of a fruit punch dressing that kids often enjoy.
Step 7
Finally, for the yellow dressing. To the remaining portion of the salad, add 0.5 tablespoon of honey mustard and toss to coat.
