㉠ Wash the fresh napa cabbage thoroughly. Blanch it in boiling water for about 1 minute – be careful not to overcook it, or it will become too soft. Rinse the blanched cabbage under cold water, squeeze out excess moisture, and then tear it into bite-sized pieces by hand. Gently mix it with 1 Tbsp of sesame oil and a pinch of salt (optional) to retain its crispness and add a nutty flavor. (While Su-mi’s recipe uses only sesame oil, you can add a tiny bit of salt for extra seasoning.)

㉡ Soak the glass noodles in cold water for about 30 minutes until softened. Once soaked, boil them in water for approximately 5 minutes. Make sure not to overcook them so they don’t become mushy. Drain the cooked noodles completely. ㉢ Thinly slice the fish cake into strips. Place the sliced fish cake in a dry frying pan (no oil added) and stir-fry until lightly golden brown. This will enhance its savory flavor. ㉣ Prepare an egg omelet by thinly pan-frying the egg. Let it cool, then cut it into fine strips. The colorful egg garnish will add visual appeal to your dish.
