Mushroom and Rice Bibimbap: A Flavorful Meal with Nutty Chamdream Rice

It’s a satisfying one-bowl meal that pairs wonderfully with just kimchi. Main Ingredients
- 300g Gyeonggi Chamdream rice (serves 2)
- 100g King Oyster Mushrooms
- 100g Oyster Mushrooms
- 1-2 Shiitake Mushrooms
- 5g Cordyceps Mushrooms
- 20 Ginkgo Nuts
- 1/2 portion Steamed Corn Kernels
- 2 Egg Yolks
Seasoning Sauce Ingredients
- 3 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 0.5 Tbsp Minced Garlic
- 1/3 Green Chili Pepper, finely chopped
- 1/3 Red Chili Pepper, finely chopped
- 1 Tbsp Corn Syrup (or similar sweetener)
- 1/6 Scallion, finely chopped
- 3 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 0.5 Tbsp Minced Garlic
- 1/3 Green Chili Pepper, finely chopped
- 1/3 Red Chili Pepper, finely chopped
- 1 Tbsp Corn Syrup (or similar sweetener)
- 1/6 Scallion, finely chopped
Cooking Instructions
Step 1
Prepare the rice, which is key to a delicious bibimbap. I recommend Gyeonggi Chamdream rice, known for its nutty aroma and soft texture. It’s famous for tasting great year-round and its grains remain distinct, making it suitable for any dish. Prepare about 2 servings of rice.
Step 2
When washing rice, pay special attention to the first rinse. Rice absorbs the most water from the first rinse, so using good quality water enhances the flavor. Chamdream rice, freshly milled, has uniform grains without breakage, which further improves its taste. Gently rinse the rice until clean.
Step 3
Prepare the mushrooms and other ingredients for the nutritious rice. Gather king oyster mushrooms, oyster mushrooms, shiitake mushrooms, cordyceps mushrooms, ginkgo nuts, and steamed corn kernels. Feel free to add other mushrooms or vegetables according to your preference.
Step 4
Prepare each ingredient for cooking:
1. Shell the steamed corn kernels.
2. To easily peel ginkgo nuts, place them in a milk carton and microwave for about 40 seconds.
3. Separate the oyster mushrooms into individual strands.
4. Slice the king oyster mushrooms into bite-sized pieces.
5. Slice the shiitake mushrooms. If using dried shiitake, rehydrate them in water first.
6. Have the cordyceps mushrooms ready without washing.
Step 5
Place the rinsed rice into the electric rice cooker. Arrange the prepared mushrooms, corn, ginkgo nuts, and cordyceps on top of the rice. It’s okay if the ingredients are not fully submerged in the water. Let the rice cook.
Step 6
Let’s make the seasoning sauce! In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds, 0.5 Tbsp minced garlic, finely chopped 1/3 green chili pepper and 1/3 red chili pepper, 1 Tbsp corn syrup, and finely chopped 1/6 scallion. Mix well until all ingredients are incorporated. Adjust seasoning to your taste. This sauce is truly delicious!
Step 7
Once the rice is cooked, open the rice cooker lid and gently stir the rice with the cooked ingredients to combine them well. Your delicious mushroom and rice bibimbap is ready!
Step 8
Transfer the mushroom and rice bibimbap to a beautiful serving bowl. Place the prepared seasoning sauce on the side. Serving it in a nice bowl makes the meal even more enjoyable.
Step 9
Top the bibimbap with fresh egg yolks. If separating yolks is difficult, try using a slotted spoon with holes. Crack the egg onto the slotted spoon, and the white will drain through, leaving the yolk intact.
Step 10
Gently break the yolk and mix it with the rice. Add the seasoning sauce to your liking and mix everything together. Your incredibly delicious mushroom bibimbap is complete!
