Million Mushroom and Perilla Seed Pancake: A Delicious Mushroom and Egg Pancake Packed with Perilla Seed Powder
Instead of flour, this pancake uses eggs and a generous amount of perilla seed powder with Million Mushrooms, making it easier, tastier, and healthier. Enjoy a delightful savory pancake!
Ingredients
- 1 pack Million Mushrooms
- 3-4 Tbsp perilla seed powder
- 2 eggs
- Pinch of salt
- Pinch of black pepper
- 1/2 stalk scallions or green onions
- 1/2 onion
- Small amount of red and green chili peppers (optional)
Cooking Instructions
Step 1
1. Gently rinse the Million Mushrooms under running water and pat them dry. Chop them into bite-sized pieces, about 1cm thick. Finely chop the scallions (or green onions), onion, and chili peppers. Feel free to substitute with other mushrooms or vegetables you have on hand. Even just using Million Mushrooms alone will result in a delicious pancake.

2. In a large bowl, combine the chopped Million Mushrooms and vegetables. Add 3-4 tablespoons of perilla seed powder for a nutty flavor. Season with a pinch of salt and a pinch of black pepper to taste.

3. Crack in the 2 eggs and mix everything thoroughly until well combined to form the batter. The batter should not be too thin; it should hold its shape when scooped.

4. Heat a frying pan over medium-low heat and add 1-2 tablespoons of brown rice oil or vegetable oil. Spoon portions of the batter onto the hot pan, shaping them into small, round pancakes. Once the bottom is golden brown and the edges start to set, carefully flip the pancake with a spatula. Avoid flipping too many times, as this can absorb excess oil. Flipping when the egg on the top has mostly set will result in a better shape, taste, and less oil absorption. Cook until both sides are golden brown and cooked through.
