With the school year not yet started, we’re all looking for delicious snacks at home. Here’s an Accordion Potato Bake made simply with ingredients you already have. It’s a delightful snack that’s slightly crispy on the outside and tender on the inside. It’s ready in just 5 minutes using only the microwave, making it a fun activity to enjoy with the kids!

Ingredients
  • 2 potatoes (medium-sized)
  • 2-3 Tbsp olive oil
  • Pinch of coarse salt
  • Pinch of dried parsley flakes

Cooking Instructions

Step 1

First, peel the potatoes and rinse them under water. To help you slice them evenly without cutting all the way through, place two chopsticks parallel on your cutting board and rest the potato on top. This way, the knife won’t cut past the chopsticks, allowing you to create the accordion shape without the potato falling apart.

Step 2

Now, slice the potato very thinly. Thanks to the chopsticks, slicing to a uniform thickness will be much easier. Gently spread olive oil into all the nooks and crannies of the sliced potato. The olive oil will enhance the potato’s flavor and help it cook through evenly.

Step 3

Sprinkle coarse salt in between the thinly sliced layers where you’ve applied olive oil. Seasoning it this way allows the salt to penetrate each layer, making it more flavorful. Once seasoned, place the potato on a microwave-safe dish and microwave for 5 minutes. Adjust the cooking time based on your microwave’s wattage.

Step 4

Remove from the microwave and sprinkle generously with dried parsley flakes for a beautiful finish. This freshly baked accordion potato is savory and nutty, making it an excellent snack for kids or even a great accompaniment to a cold drink. It’s best enjoyed while still warm.
