Mandu Mini Gimbap Ingredients
  • 1 bowl of warm cooked rice
  • 5 dumplings (mandu)
  • Well-fermented kimchi (or pickled radish), chopped
  • 2 Cheongyang peppers (optional, for a spicy kick)
  • 2 sheets of dried seaweed (gim)
  • 1 Tbsp soy sauce
  • 100ml water
  • Pinch of salt
  • Sesame seeds
  • A little sesame oil

Cooking Instructions

Step 1

First, prepare the dumplings. Place 5 dumplings in a microwave-safe bowl with 100ml of water. Cover with plastic wrap and microwave for about 5 minutes until cooked through. Ensuring the dumplings are moist is key.

Step 2

While the dumplings are cooking, prepare the filling ingredients. If you don’t have pickled radish, finely chop the well-fermented kimchi and Cheongyang peppers. The kimchi will add a tangy and crunchy texture, while the peppers provide a spicy element to cut through any richness. (Adjust or omit the peppers based on your spice preference.)

Step 3

Now, it’s time to mix the gimbap filling. In a bowl with 1 bowl of warm cooked rice, add the cooked and roughly mashed dumplings. Mix in the finely chopped kimchi, Cheongyang peppers, 1 Tbsp soy sauce, and a pinch of salt.

Step 4

Next, add a little sesame oil for fragrance and a pinch of sesame seeds for a nutty flavor. Gently mix all the ingredients together until well combined, being careful not to mash the rice too much.

Prepare the seaweed sheets. Cut each of the 2 sheets of gim into 4 equal portions. Spoon a portion of the rice mixture onto each piece of seaweed.

Carefully roll up the seaweed, enclosing the filling. Roll them tightly to prevent the ingredients from falling out; this helps create a neat gimbap shape.

Step 7

Brush a little sesame oil over the surface of the rolled gimbap for a glossy finish. Sprinkle with sesame seeds to enhance the nutty aroma and flavor, completing your delicious Mandu Mini Gimbap.
