Cooking Instructions
Step 1
The fresh Korean beef arrived in vacuum-sealed packaging, ensuring its freshness. Using high-quality, fresh beef for Sanjeok results in a superior texture and taste. The vibrant red color upon opening the package indicates excellent freshness, which elevates the quality of the final dish.
Step 2
Grate the pear, apple, and onion that have been stored in the freezer. These fruits and vegetables, when grated and added, help tenderize the meat and impart a subtle sweetness and rich flavor. Mix these with soy sauce to create the marinade.
Step 3
Gently press the beef slices with paper towels to remove any excess blood. Place the beef in a bowl and add all the prepared Sanjeok marinade ingredients. Gently knead the mixture to ensure the marinade coats the meat evenly. Thorough mixing is key for the flavors to penetrate.
Step 4
While you can cook the marinated beef immediately, allowing it to marinate in the refrigerator for at least half a day will result in a deeper, more complex flavor as the marinade fully penetrates. After marinating, shape the meat into desirable portions. You can thread them onto skewers or flatten them into strips.
Step 5
While it can be pan-fried, using an air fryer is convenient as it minimizes splattering oil and cooks the meat more evenly. Air frying saves time and simplifies the cooking process compared to pan-frying.
Step 6
Preheat your air fryer. Cook the Sanjeok at 170°C (338°F) for 15 minutes. Then, flip the pieces and cook for an additional 10 minutes to ensure even browning on both sides. The total cooking time is approximately 25 minutes, but adjust based on the thickness of the meat and your air fryer’s specifications.
Step 7
This golden-brown and appetizing Sanjeok can be enjoyed as is. However, for a more elegant presentation, especially when serving guests or during ancestral rites (Charye), trimming the edges with scissors will create a neat and refined appearance.
Step 8
Arrange the trimmed Sanjeok attractively on a serving platter. Finally, garnish with pine nuts for added nutty flavor and visual appeal. You can use whole pine nuts or finely chopped ones.
Step 9
Served warm, this Sanjeok is incredibly tender and melts in your mouth, offering a truly delightful culinary experience. It’s a perfect special dish for the holidays that the whole family can enjoy together.
