Cooking Instructions

Step 1

First, let’s prepare the delicious sauce for your king oyster mushroom skewers. In a bowl, combine 1 tablespoon of minced garlic, 1 tablespoon of soy sauce, 0.5 tablespoon of oyster sauce, 0.5 tablespoon of sugar, and a pinch of black pepper. Stir well until all ingredients are thoroughly mixed. I personally enjoy a stronger garlic flavor, so I’ve increased the amount of minced garlic slightly – feel free to adjust it to your preference!

Step 2

Wash the fresh king oyster mushrooms thoroughly under running water. Trim off any dirty parts from the base of the mushrooms with a knife for a clean finish.

Step 3

Now, slice the king oyster mushrooms into bite-sized pieces. Slicing them about 1 to 1.5 cm thick will give them a wonderful texture when cooked. Next, we’ll score the mushrooms to help the sauce penetrate deeply. Make criss-cross cuts (# pattern) on both sides of the mushroom slices. (Refer to the picture; scoring both sides thoroughly will yield the best results!)

Step 4

Generously brush the prepared sauce onto the scored king oyster mushrooms. Make sure to coat the cuts and both surfaces of the mushrooms evenly. Unlike pan-frying, the sauce doesn’t directly contact as much surface area in an air fryer, so careful application is key for maximum flavor infusion.

Step 5

If you like, you can add a little extra minced garlic on top. Place the sauced king oyster mushrooms in the air fryer basket. Set the temperature to 160°C (320°F) and cook for 15 minutes. Flipping them halfway through will ensure even cooking.

Step 6
