  • 1 serving of kal-guksu noodles or udon noodles
  • 1 handful of bean sprouts
  • 1 handful of green onions
  • 1 Tbsp minced garlic
  • 1/2 medium onion

Seasoning
  • 3 Tbsp soy sauce
  • 2 Tbsp corn syrup (or honey)
  • 1 Tbsp oyster sauce
  • Pinch of salt (to taste)
  • 1 Tbsp mirin (rice wine)

Cooking Instructions

Step 1

Before you begin cooking, start by boiling water in a pot for the noodles. Once the water is boiling, add your kal-guksu or udon noodles and cook according to package directions. While the noodles are cooking, heat 1 tablespoon of cooking oil in a wide pan over medium-low heat. Add the handful of green onions and 1 tablespoon of minced garlic. Sauté gently to create a fragrant garlic and scallion oil, being careful not to burn them.

Step 2

Once the garlic and scallion oil is fragrant, add the 250g of thinly sliced pork belly to the pan. Pour in 1 tablespoon of mirin and 1 tablespoon of soy sauce. Stir-fry the pork belly until it loses its pink color and becomes lightly golden brown. This step helps to render the fat and develop a richer flavor.

Step 3

Rinse the handful of bean sprouts thoroughly and have them ready. Thinly slice the 1/2 onion. When the pork belly is almost fully cooked, add the prepared bean sprouts and sliced onion to the pan. Stir-fry everything together until the bean sprouts are tender-crisp and the onions have softened. The bean sprouts add a fresh crunch, while the onions bring a subtle sweetness.

Step 4

Now, let’s prepare the delicious sauce that will bring all the flavors together. In a small bowl, mix together 2 tablespoons of soy sauce, 2 tablespoons of corn syrup, and 1 tablespoon of oyster sauce. This sauce will provide a savory, sweet, and umami-rich coating for your noodles and pork.

Once the pork and vegetables are well combined, pour the prepared sauce into the pan. Let it simmer for a moment to allow the flavors to meld. Then, add the pre-cooked kal-guksu or udon noodles. Continue stir-frying until the noodles are thoroughly coated and heated through, and the pork is tender. Taste the dish and adjust the seasoning if necessary.
