  • 3 medium potatoes
  • 1/4 small onion

Cooking Instructions

Step 1

First, thinly slice the onion. Peel the potatoes and cut them into bite-sized pieces, about 2cm cubes, making them easy for children to eat or scoop with a spoon. Uniform shapes ensure even cooking.

Step 2

Place the cut potatoes in a pot and add enough water to cover them. Bring to a boil over high heat, then reduce to medium heat and simmer for about 5 minutes. This parboiling step helps the potatoes become tender without falling apart.

Step 3

After 5 minutes, when the potatoes are slightly cooked, drain them thoroughly in a colander. Excess water can cause sputtering or affect the final taste.

Step 4

In a small bowl, combine 3 Tbsp of curry powder with 1 Tbsp of mirin and 2 Tbsp of water. Whisk until smooth and lump-free. Set this curry mixture aside.

Step 5

Now, preheat a frying pan over medium-low heat and melt 20g of butter. Add the thinly sliced onion and sauté until translucent. Once the onion becomes transparent, add 1 Tbsp of minced garlic and stir-fry together until fragrant, about 1 minute. Be careful not to burn the garlic.

Step 6

When the onions and garlic are fragrant, add the drained potatoes and sprinkle with 1 tsp of salt. Stir-fry over medium heat for about 3-4 minutes until the potatoes are lightly browned. Make sure to stir occasionally to prevent them from sticking to the pan.

Step 7

Check if the potatoes are tender by piercing them with a fork. If they are cooked, pour in the prepared curry mixture. Reduce the heat to low and stir-fry for another 1-2 minutes until the sauce coats the potatoes and thickens slightly. Finish with a pinch of black pepper for extra flavor.
