Main Ingredients
  • 20 eggs
  • 1/2 stalk green onion (approx. 10cm length)
  • 5-6 cloves garlic

Braising Sauce
  • 500ml water
  • 1 ladle soy sauce (approx. 100-120ml)
  • 3 Tbsp sugar (using a regular tablespoon)
  • 1/2 tsp black pepper
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients for the braised eggs. Have the eggs ready, and wash the green onion and garlic.

Step 2

Wash the eggs thoroughly and place them in a pot. Add enough water to completely cover the eggs. Adding 1 tablespoon of salt and 2 tablespoons of vinegar will help the eggshells peel easily and prevent cracking. Bring to a boil over high heat, then reduce to medium heat and boil for about 10-12 minutes until hard-boiled. (Adjust boiling time based on egg size and stove power.)

Step 3

Once the eggs are well-boiled, briefly cool them in cold water. Then, carefully peel the shells one by one. Gently scoring the shells before peeling will make it much easier.

Step 4

Now, in the pot where you’ll make the braised eggs, add 500ml of water and 1 ladle of soy sauce. You can adjust the amount of soy sauce based on the number of eggs and your preference.

Step 5

Add the green onion (cut into approx. 10cm lengths) and 5-6 whole garlic cloves to the pot to add flavor to the braised eggs. The green onion and garlic will give the sauce a refreshing taste.

Step 6

Next, add 3 tablespoons of sugar for sweetness and 1/2 teaspoon of black pepper for a touch of aroma to balance the sauce. You can adjust the amount of sugar to your taste.

Step 7

Add all the prepared hard-boiled eggs to the pot. Turn on the heat after adding the eggs so that the sauce penetrates well.

Step 8

Once the braising liquid starts to bubble, reduce the heat to medium. Be careful not to boil over high heat from the beginning, as it can become too salty or burn.

Step 9

Simmer over medium heat until the soy sauce flavor has evenly permeated the eggs and the liquid has reduced to a thick consistency. Rolling the eggs occasionally will help them achieve a beautiful color.

Step 10

Simmer until about 5 tablespoons of liquid remain; this will result in the perfect consistency for a side dish. You can reduce it further or less depending on your preference. Finally, sprinkle with sesame seeds for an added nutty aroma, and your delicious soy-braised eggs are complete! They are delicious when hot, but even better after cooling and storing in the refrigerator.
