  • 400g boneless chicken thigh, cut into bite-sized pieces
  • 4 sections of white part of green onion, cut into pieces similar in size to the chicken
  • 5 Tbsp cooking oil
  • 0.1 Tbsp salt per skewer (for seasoning)
  • 0.1 Tbsp black pepper per skewer (for seasoning)

Sweet & Savory Skewer Sauce
  • 1 Tbsp sugar
  • 2 Tbsp mirin (or cooking sake)
  • 2 Tbsp soy sauce
  • 2 Tbsp corn syrup (for shine and sweetness)
  • 2 Tbsp oyster sauce (for umami flavor)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

Cut the boneless chicken thigh into bite-sized pieces, roughly the size of a thumb joint. Cut the white parts of the green onion into similar lengths as the chicken pieces for a balanced look on the skewers.

Thread the chicken and green onion pieces onto skewers, alternating them. A ‘chicken – green onion – chicken – green onion’ pattern looks appealing and is easy to cook. With 400g of chicken thigh and 4 sections of green onion, you should be able to make about 10 skewers.

Lightly season all the assembled skewers with salt and black pepper. Sprinkle ‘just a pinch’ over each skewer. This step helps to remove any gaminess from the chicken and enhances its flavor.
