Homemade Crispy Peanut Gim Gangjeong
The best snack for family or a perfect gift!
As the cool breeze starts to blow, it’s the perfect season for making gangjeong! Many people think gangjeong is difficult to make, but if you have just two sheets of kimbap seaweed and some nuts, you can whip up a whole batch in just 10 minutes! It’s such a popular snack that we often use up 100 sheets of kimbap seaweed during holidays. Let’s make a delicious, sweet gim gangjeong where you can enjoy the goodness of kimbap seaweed the most!
Ingredients
- Peanuts (use roasted peanuts)
- Roasted sesame seeds 1 Tbsp
- Rice syrup (Jocheong) 100g
- Kimbap seaweed sheets 2
Cooking Instructions
Step 1
Feel free to use any nuts you like! Prepare about 1 cup (245ml). I used whole roasted peanuts for a nice crunch, but if you’re making this for the first time, finely chopped peanuts will be easier to work with.
Step 2
Place the kimbap seaweed sheets on a cutting board or work surface with the rough side facing up.
Step 3
Pour the rice syrup into a non-stick pan and bring it to a simmer over medium heat. Once it starts to bubble, reduce the heat to low.
Step 4
Add the prepared nuts to the simmering syrup and stir-fry for about 6-7 seconds only. Be quick to prevent them from burning. This coats the nuts in syrup, making them extra nutty and crispy.
Step 5
Quickly pour the nut and syrup mixture onto the seaweed and spread it evenly with a rubber spatula. Then, place the second sheet of seaweed on top, rough side up, and gently press down with the spatula to help everything adhere.
Step 6
While the mixture is still warm, use a rolling pin to flatten it evenly. This will help the gangjeong set into a firm, uniform thickness, making it easy to slice later.
Step 7
Once the gim gangjeong has cooled slightly and started to firm up, but before it hardens completely, slice it into your desired pieces. Be careful not to slice when it’s too hot, as it might break apart.
Step 8
You can also cut it to fit the size of your gift box. Even beginners can make this easily, but if you encounter any difficulties while making it, feel free to ask! I’m here to help.
