As the weather gets colder, a warm, comforting soup is just what you need! I’ve made a delicious dumpling soup with seasonal snow crab and a medley of fresh vegetables. This soup is packed with flavor and nutrition, perfect for warming up your family on a chilly day. ^^

Main Ingredients
  • 4 pieces fresh snow crab (cleaned)
  • 1 handful clam meat
  • 1/2 zucchini (sliced into half-moons)
  • 1/2 onion (thinly sliced)
  • 50g enoki mushrooms (trimmed and separated)
  • 1/2 potato (diced into bite-sized pieces)
  • 1/2 green onion (sliced diagonally)
  • 30 frozen dumplings

Broth and Seasoning
  • 1 Tbsp cooking wine (Mirin or Cheongju)
  • 1 Tbsp crab roe soy sauce or regular soy sauce
  • 10 dried anchovies (for broth)
  • 5 pieces dried kelp (kombu, approx. 5x5cm)
  • 800ml water

Cooking Instructions

Step 1

First, in a pot, combine the 800ml of water, dried anchovies, and kelp. Bring to a boil over medium heat and simmer for 10 minutes to create a flavorful broth. (You can also use broth cubes or store-bought broth. It’s best to remove the kelp after 10 minutes to avoid a bitter taste.)

Step 2

Let’s prepare the fresh vegetables for the soup! Slice the zucchini into half-moons, thinly slice the onion, and dice the potato into bite-sized cubes. Trim the base of the enoki mushrooms and separate them into strands. Slice the green onion diagonally for added color and aroma.

Step 3

Once the broth has developed a rich flavor, carefully strain out the anchovies and kelp using a sieve, leaving only the clear broth behind. This step ensures a clean and refined taste for your soup.

Step 4

Now, add the prepared potatoes, zucchini, and onions to the clear broth. Let them simmer until the potatoes are slightly tender. The potatoes will release their natural sweetness into the broth.

Step 5

Gently rinse the clam meat under cold water. It’s a good idea to check for and remove any stray shell fragments.

Step 6

While the vegetables are simmering, skim off any foam that rises to the surface of the broth with a spoon. This process will make your soup clearer and more pleasant to the palate and eyes.

Step 7

Once the soup begins to boil, add the prepared clam meat and cook along with the vegetables. Avoid overcooking the clam meat, as it can become tough. Cook just until tender.

Step 8

Now, it’s time to add the star ingredient – the snow crab! Once the crab is cooking, season the broth with 1 Tbsp of cooking wine (Mirin) and 1 Tbsp of crab roe soy sauce (or regular soy sauce) to deepen the flavor and add umami. Feel free to adjust the amount of soy sauce to your preference.

Step 9

When the crab and clams are cooked through and look appetizing, add the frozen dumplings. Stir occasionally to prevent them from sticking to the bottom of the pot, and cook until the dumplings are fully done.

Step 10

Once the dumplings float to the surface and are cooked, add the sliced green onion and enoki mushrooms. Simmer for another moment, and your delicious Snow Crab and Dumpling Soup is ready! Enjoy it while it’s hot. ♡
