Hearty Seolleongtang Rice Cake Soup

A Delicious Rice Cake Soup Simmered in Rich Ox Bone Broth

I melted some ox bone broth from my freezer and made a delicious rice cake soup! This recipe uses pre-made or homemade rich ox bone broth for a comforting and flavorful Tteokguk.

Ingredients
  • 5 servings of Tteokguk rice cakes (approx. 750g)
  • Ox bone broth (store-bought or homemade)
  • 1 Tbsp minced garlic
  • 1 Tbsp soup soy sauce (Guk-ganjang)
  • Salt (to taste)
  • 1 stalk green onion
  • Pinch of black pepper

Cooking Instructions

Step 1

If your ox bone broth is frozen, thaw it overnight in the refrigerator or gently heat it in a pot with a little water over low heat. For a richer flavor, you can simmer the broth with beef brisket or shank. (If you don’t have homemade broth, store-bought seolleongtang broth is a great alternative.)

Step 2

Pour the thawed ox bone broth into a pot. Add water to reach the desired consistency and volume for your Tteokguk, ensuring there’s enough broth for the rice cakes. A general guideline is about 300-400ml of broth per serving of rice cakes.

Step 3

Add 1 tablespoon of minced garlic to the broth. Place the pot over high heat and bring the broth to a boil.

Step 4

While the broth is heating, soak the Tteokguk rice cakes in cold water for about 10 minutes. This helps to soften them, preventing them from clumping together when cooked and ensuring they cook evenly.

Step 5

Wash the green onion and thinly slice it diagonally. Prepare the sliced green onion ahead of time, as it will be used as a topping. Separating the white and green parts can be helpful.

Step 6

Once the broth reaches a rolling boil, reduce the heat to medium. Stir in 1 tablespoon of soup soy sauce (Guk-ganjang) to add a foundational savory flavor and a pleasant color to the soup.

Step 7

After adding the soup soy sauce, season the broth with salt to your preference. It’s best to season lightly at this stage, as the rice cakes will absorb some of the saltiness as they cook.

Step 8

Drain the softened rice cakes from the cold water and add them all to the simmering broth.

Step 9

Add the sliced white parts of the green onion to the pot along with the rice cakes. Continue to cook over medium heat until the rice cakes are tender and cooked through. They will naturally float to the surface when they are done.

Step 10

When the rice cakes have fully cooked and are floating, it’s a sign that everything is well combined. Just before turning off the heat, add the sliced green parts of the green onion for a fresh aroma and vibrant color.

Step 11

Turn off the heat. If desired, sprinkle a pinch of black pepper over the soup. Your comforting and flavorful Tteokguk, made with rich ox bone broth, is now ready to be served. Enjoy it hot!
