- 1/3 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 4 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 2 stalks Green Onion
- 3 Korean Green Chili Peppers
- 2 cups Water (400ml)
Cooking Instructions
Step 1
First, prepare the main ingredients: 3 potatoes and 1 onion. Peel the potatoes, wash them thoroughly, and then slice them thinly (about 0.5cm thick, resembling half-moons) or cut them into bite-sized cubes. Avoid slicing them too thinly, as they might break apart during cooking. Slice the onion into similar-sized pieces. For the Spam, cut it into bite-sized pieces (about 1-1.5cm thick) or mash it before adding; mashing allows it to absorb the seasonings better and enhances the flavor. You can choose your preferred method.
Step 2
Now, let’s make the core seasoning for this delicious potato stew. In a pot or wok, combine the sliced potatoes and onions. Add 1/3 Tbsp Doenjang, 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp Sugar, 4 Tbsp Soy Sauce, and 1 Tbsp Minced Garlic. Next, add the sliced Spam. Chop the 2 stalks of green onion diagonally and finely slice the 3 Korean green chili peppers, then add them to the pot as well. The green onions and chili peppers will add a fragrant aroma and a pleasant spicy kick, elevating the overall taste of the Gamja Jjageuli.
Step 3
Once all the ingredients and seasonings are in the pot, pour in 2 cups (400ml) of water. The amount of water should be just enough to partially submerge the ingredients. Begin boiling over high heat. Once it comes to a rolling boil, reduce the heat to medium-low and let it simmer until the potatoes are tender and cooked through. Occasionally lift the lid to check the consistency of the broth as it thickens, and stir the ingredients gently to ensure they cook evenly.
Step 4
The stew is ready when the potatoes are soft enough to be easily pierced with a fork and the broth has reduced to a thick, savory consistency! Serve this flavorful Gamja Jjageuli, infused with the aroma of green onions and chili peppers, over a bowl of hot steamed rice for a truly satisfying home-cooked meal. It’s a guaranteed rice thief!
