Hearty Beef and Seaweed Soup (Miyeokguk)

So Easy! Let’s Make the Ultimate Basic Beef Seaweed Soup 🙂

My mother used to make a very simple seaweed soup with just seaweed! I loved the pure, deeply simmered flavor. However, my husband insisted that seaweed soup must have beef! He believed every soup needed something extra, like beef! So, I started adding beef to the recipe. Let me share that recipe with you now!

Main Ingredients
  • 1/3 cup dried cut seaweed (about 10g)
  • 50g beef for soup
  • 1L – 1.5L water

Cooking Instructions

Step 1

First, prepare 1/3 cup of dried cut seaweed. If the seaweed pieces are too long for your liking, you can cut them into bite-sized pieces (about 3-4 cm) with scissors 2-3 times for easier eating. Place the prepared seaweed in a bowl of water and let it soak for about 10 minutes until rehydrated. Once rehydrated, squeeze out as much water as possible by hand and set aside.

Step 2

Gently pat dry about 50g of beef for soup with a paper towel to remove any excess blood. Heat 1.5 Tbsp of sesame oil and 1.5 Tbsp of soup soy sauce in a pot over medium heat. Add the beef and stir-fry.

Step 3

Continue to stir-fry the beef until its color changes to brown. This step helps to remove any gamey odors and develops a richer flavor.

Step 4

Once the beef is sufficiently stir-fried, add the squeezed seaweed to the pot and stir-fry together with the beef for another 1-2 minutes until the seaweed softens and combines well with the meat. (Tip: You can adjust the amount of seaweed according to your preference. You can start with less and add more later if needed!)

Step 5

Now, pour in 1L to 1.5L of water into the pot. Adjust the amount of water based on your desired soup consistency. Add 2 Tbsp of minced garlic, 0.5 Tbsp of fish sauce (optional, for enhanced umami), and 0.5 Tbsp of beef bouillon powder (optional, for enhanced umami). Stir everything to combine, then cover the pot with a lid and let it simmer gently over medium-low heat for about 20-30 minutes. The longer you simmer, the deeper and richer the soup flavor will become, making it even more delicious!

Step 6

Taste the soup and add a pinch of salt if needed to adjust the seasoning. Once the ingredients are tender and the soup has developed a rich flavor, your delicious Beef Seaweed Soup is ready! Enjoy it with a warm bowl of rice.
