Hearty and Warm Tteok-Mandu-Guk (Rice Cake and Dumpling Soup)

Main Ingredients
- 2 cups rice cake slices (tteokguk tteok)
- 10 frozen dumplings
- 1/3 Korean zucchini (aehobak)
- 1/4 onion
- 1 anchovy-kelp broth pack (or anchovies and kelp)
- 1 handful green onions
- 1/2 cup dried shiitake mushrooms (optional)
- 2 eggs
Seasoning
- 1.5 Tbsp soy sauce for soup or salt (adjust to taste)
- 2 Tbsp minced garlic

Cooking Instructions
Step 1
First, let’s make a delicious broth. Pour water into a pot, add the broth pack, and bring to a boil over medium heat. If you don’t have a broth pack, using anchovies and kelp works well too. Simmer for about 10 minutes to extract a rich broth.
Step 2
Once the broth is at a rolling boil, remove the broth pack. Add 2 tablespoons of minced garlic to infuse the soup with flavor. Keep the heat on medium.
Step 3
Now it’s time to add the star ingredients of the Tteok-Mandu-Guk. Carefully place 10 dumplings into the pot. You can add frozen dumplings directly without thawing.
Step 4
Add 2 cups of rice cake slices (measured with a paper cup) that have been soaked in cold water. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot.
Step 5
When the soup starts to bubble again, season it with 1.5 tablespoons of soy sauce for soup or salt. Taste and adjust the seasoning as needed. Add the thinly sliced onion and Korean zucchini at this stage.
Step 6
Once the zucchini is tender, gently pour in 2 lightly beaten eggs in a thin stream. Finally, add the roughly chopped green onions and soaked shiitake mushrooms (if using), and simmer for a little longer to let the flavors meld.
Step 7
Serve the finished Tteok-Mandu-Guk in warm bowls. For an extra touch of flavor, sprinkle with dried seaweed flakes and sesame seeds. It’s a perfect, satisfying meal!
