Hello everyone! Today, we’re going to make a delicious and tangy aged kimchi pork back-bone stew, also known as Muk-eunji Gamjatang. Using aged kimchi adds an unparalleled depth of flavor to the classic gamjatang.

The first crucial step is to remove any gamey smell from the pork back-bones and blood. Soak the 1.5kg of pork back-bones in cold water. Then, add 1 tablespoon of sugar and 1 tablespoon of instant coffee powder and let it soak for at least 1 hour. The coffee powder is a secret ingredient for effectively neutralizing any unpleasant odors.
Step 3
Once the pork back-bones have soaked and bled, blanch them in boiling water. Boil for about 5 minutes to remove impurities, then rinse them thoroughly under cold running water. This process ensures a clearer and cleaner broth for your gamjatang.
