Main Ingredients
  • 1 medium potato
  • 150g ripe kimchi
  • 1/2 medium onion
  • 10cm piece of green onion
  • 3 cups anchovy-kelp broth (approx. 600ml)

Seasoning Ingredients
  • 1 Tbsp sesame oil
  • 0.5 Tbsp minced garlic
  • 0.3 Tbsp sugar (or 1/3 Tbsp)
  • 0.5 Tbsp soy sauce for soup (or 1/2 Tbsp)
  • Salt to taste
  • Pepper to taste

Cooking Instructions

Step 1

Prepare all your ingredients before you begin. Peel the potato and dice it into about 1.5cm cubes, or cut into bite-sized pieces. Remove the core from the kimchi and chop it into 1.5cm wide pieces. Thinly slice the onion and thinly slice the green onion diagonally.

Step 2

Heat 1 Tbsp of sesame oil in a pot over medium heat. Add the chopped kimchi and stir-fry for about 2-3 minutes until it becomes translucent, wilts down, and the sourness mellows. To balance the kimchi’s acidity and enhance its flavor, add 0.3 Tbsp of sugar and continue to stir-fry.

Step 3

Once the kimchi is well stir-fried, add the diced potatoes and cook for another minute, stir-frying them with the kimchi. This lightly coats the potatoes in sesame oil, deepening the soup’s flavor.

Step 4

Pour in the 3 cups of prepared anchovy-kelp broth into the pot. Bring it to a boil over high heat.

Step 5

As soon as the broth comes to a rolling boil, reduce the heat to medium. Add the thinly sliced onion, 0.5 Tbsp of minced garlic, and 0.5 Tbsp of soy sauce for soup to season the kimchi soup. Continue to simmer for about 3-5 minutes, or until the onion becomes translucent.

Step 6

Check if the potatoes are tender. Adjust the seasoning with salt and pepper to your preference. Finally, add the diagonally sliced green onions and simmer for another moment to complete the delicious kimchi soup. Feel free to add some spicy green chili peppers if you like it extra hot.
