Main Ingredients
  • 5 sheets of Korean fish cakes (eomuk/odeng)
  • 1/5 piece of Korean radish (mu, about 150g)
  • 1 medium potato
  • 1/4 onion
  • 1 Cheongyang chili pepper (optional, for added spice)
  • 800ml anchovy and kelp broth

Seasoning & Others
  • 1 Tbsp soy sauce for soup (ganjang)
  • 1 Tbsp minced garlic
  • 1/2 stalk of green onion (thinly sliced)
  • Pinch of black pepper

Cooking Instructions

Step 1

Let’s start building the foundation for a deep and refreshing broth! Add the large chunks of potato and thinly sliced radish to the anchovy broth. Bring it to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes. This process will infuse the broth with sweetness and a clean, refreshing flavor from the vegetables.

Step 2

While the broth is simmering, cut the fish cakes into bite-sized pieces. Once the broth is boiling, stir in 1 tablespoon of minced garlic to enhance the aroma. Then, add the prepared fish cakes. Once the fish cakes have softened, season the soup with 1 tablespoon of soy sauce for soup. Taste and add a little more soy sauce if needed.

Step 3

Add the thinly sliced or roughly chopped onion and the diagonally sliced Cheongyang chili pepper (if you prefer a spicier kick). Let it simmer for another few minutes until the onion becomes translucent. The sweetness from the onion will enrich the soup’s flavor even further.

Finally, generously garnish with the thinly sliced green onions. The fresh, aromatic scent of the green onions will elevate the overall flavor profile of the fish cake soup.
