  • 1 whole fresh chicken (cleaned)
  • 3 pieces of Eupatorium chinense (cleaned)
  • 10 jujube fruits (dates)
  • 2 pieces of Astragalus root (Huangqi)
  • 100g black garlic
  • 50g black sesame seeds
  • 200g soaked glutinous rice
  • 4 liters of fresh water
  • 1 pinch of salt (for seasoning)

Cooking Instructions

Step 1

First, to create a clean and flavorful broth, place 4 liters of water in a pot along with the cleaned whole chicken, 3 pieces of Eupatorium chinense, 10 jujube fruits, and 2 pieces of Astragalus root. Bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 40 minutes to 1 hour, or until the chicken is fully cooked. A rich, milky broth will emerge as it simmers.

Step 2

Once the chicken is well-cooked, carefully remove it from the pot and let it cool slightly. While still warm, gently remove the bones and shred or chop the chicken meat into bite-sized pieces. This will ensure the chicken is tender and blends beautifully into the porridge.

Now, let’s prepare the beneficial black garlic. Peel all 100g of the black garlic cloves. Black garlic offers a unique sweet and deep flavor that will elevate the taste of the Samgyetjook.
