Cooking Instructions
Step 1
Introducing a special LA Galbi Jjim recipe that will captivate everyone’s taste buds. Prepare it with care for a delicious meal!
Step 2
It’s crucial to thoroughly remove the blood from the LA Galbi. Soak the ribs in cold water for about 2 hours to drain the blood. Then, pat them completely dry with paper towels. Cut the ribs into bite-sized pieces (approximately 5-7 cm) for easier cooking and serving.
Step 3
Prepare the marinade in advance, as this is key to the deliciousness of your LA Galbi Jjim. Combine soy sauce, sugar, mirin, sesame oil, minced garlic, black pepper, and salt in a bowl. Stir well until the sugar is dissolved. Let it sit for a while for the flavors to meld.
Step 4
Before stir-frying, pour the 3 tablespoons of Cheongju (rice wine) over the prepared ribs to marinate them lightly. Cover with a lid and cook over low heat, as if stir-frying, to remove any gamey odors and enhance the flavor. Be careful not to burn them.
Step 5
Add half of the prepared marinade to the ribs, cover with a lid, and simmer over medium-low heat until it reduces slightly. This allows the sauce to penetrate the meat, making it tender. Stir occasionally to prevent sticking.
Step 6
While the ribs are simmering, prepare the vegetables and other accompanying ingredients. Get your shiitake mushrooms, ginkgo nuts, Korean radish (muu), carrot, and the white part of the green onion ready.
Step 7
For a more attractive presentation and to help the sauce penetrate better, you can carve the Korean radish and carrot into decorative shapes or round off their edges. Cutting them into generous pieces will also make them easier for everyone to enjoy.
Step 8
Score the shiitake mushrooms with a knife to create a decorative flower pattern; this makes the final dish look much more appealing. Preparing all ingredients neatly will result in a more appetizing Galbi Jjim.
Step 9
Once the ribs are partially cooked and the sauce has thickened, add the prepared Korean radish and carrot. Pour in the remaining half of the marinade. Cover and simmer over medium-low heat until the radish and carrot are tender. The sweetness from these vegetables will add depth to the flavor of the Galbi Jjim.
Step 10
When the radish and carrot are almost cooked, add the shiitake mushrooms and ginkgo nuts. Simmer for a little longer. The savory aroma of the shiitake and the nuttiness of the ginkgo will add complexity to the dish.
Step 11
Simmer everything together one more time to allow all the flavors to meld. The ingredients will create a wonderful harmony as they absorb each other’s tastes. Continue to simmer until the sauce has reduced to your desired consistency.
Step 12
Finally, sprinkle a generous amount of pine nuts over the LA Galbi Jjim to add a nutty aroma and rich flavor. The pine nuts will become even more fragrant and delicious when sprinkled on the warm dish.
Step 13
Your beautifully presented and incredibly delicious, homemade LA Galbi Jjim is ready! Enjoy this heartwarming dish with warm rice for a perfect family meal.
