Main Ingredients
- 100g Rice noodles (or somen noodles)
- Water (for boiling noodles)
- 1 handful Bean sprouts
- 1/4 Bell pepper (use various colors for visual appeal)
- 1 handful Zucchini
Savory Sesame Soy Dressing
- 2 Tbsp Soy sauce (regular)
- 2 Tbsp Sesame seeds (toasted)
- 2 Tbsp Soy sauce (regular)
- 2 Tbsp Sesame seeds (toasted)
Cooking Instructions
Step 1
First, let’s prepare the noodles. Take 100g of rice noodles and gently break them in half so they fit easily into your rice cooker pot. Place them inside the inner pot.
Step 2
Now, add water to the rice cooker. Pour in boiling water until it covers the noodles and reaches about twice their height. (For Cuckoo rice cookers) Select the ‘Reheat’ function and let it cook for 9 minutes. If you’re using a different brand of electric rice cooker, please adjust the cooking time accordingly.
Step 3
While the noodles are cooking, prepare your fresh vegetables. Gently rinse the bean sprouts under cold water and pat them dry. Thinly slice the 1/4 bell pepper. Slice the zucchini thinly, either into rounds or julienne. Zucchini is also delicious eaten raw in salads, offering a lovely crisp texture.
Step 4
Next, grind your sesame seeds for that delightful nutty flavor. Take 2 tablespoons of toasted sesame seeds and grind them into a fine powder. These ground sesame seeds are the key to the noodle salad’s rich aroma and taste, so don’t skip this step!
Step 5
As soon as the rice cooker’s ‘Reheat’ cycle is finished, carefully open the lid and remove the cooked noodles. They should be perfectly tender.
Step 6
Drain the cooked noodles in a colander and rinse them thoroughly under cold running water. This rinsing process helps to cool the noodles and maintain their chewy, firm texture, preventing them from becoming mushy.
Step 7
Place the well-drained noodles into a serving bowl. Artfully arrange the prepared bean sprouts, sliced bell peppers, and zucchini over the noodles. Drizzle the ground sesame seeds and 2 tablespoons of soy sauce over the top. If you’re following a diet, you might find that a slightly less salty version enhances the feeling of fullness. Feel free to add another tablespoon of soy sauce if you prefer a more intense savory flavor.
Step 8
Once all the ingredients are assembled, it’s time to mix everything together! Enjoy your delicious and healthy noodle salad, brimming with fresh vegetables and the irresistible flavor of sesame soy dressing.
