This Halibut Lasagna is a simple, addictive dish with a flavor profile that’s subtly savory yet intensely satisfying, perfect for a leisurely home brunch. Main Ingredients
- 150g prepared halibut
- 70g onion
- 70g ham
- 2 Korean green chilies (cheongyang peppers)
- 5 Tbsp store-bought tomato sauce
- 0.5 Tbsp minced garlic
- 1 knob of butter
- A little cooking oil
- 300g shredded cheese
- 1 slice cheddar cheese
- A little dried parsley
Halibut Marinade
- 1 pinch salt
- A little coarse black pepper
- 2 Tbsp cooking wine (mirin)

Cooking Instructions
Step 1
First, prepare the domestically sourced, prepared halibut and all other ingredients for the lasagna. Properly prepared halibut is key to ensuring a clean, non-fishy taste.

Carefully remove any remaining bones and fins from the halibut. Then, slice it thinly, almost like filleting, into wide, flat pieces. Thin slices cook quickly and blend beautifully with the sauce.
Step 3
Season the sliced halibut with a pinch of salt, a little coarse black pepper, and 2 tablespoons of cooking wine. Let it marinate for about 5-10 minutes. This step removes any potential fishy odor and enhances the flavor.
Step 4
Chop the ham and onion into roughly 0.5cm pieces. Finely mince the Korean green chilies (cheongyang peppers) after removing the seeds. The chilies add a pleasant spiciness that cuts through richness.

Heat a pan over medium heat and add a little cooking oil. Sauté the minced garlic and chopped onion until they become translucent and fragrant. Add the minced green chilies and ham, and cook for another 30 seconds. Pour in the store-bought tomato sauce, mix well, and season with a little salt to taste.
