Nutritious Turmeric Black Bean Rice Recipe: Making Antioxidant-Rich Power Rice

I used to dislike beans, but I started making turmeric black bean rice because black beans are known for their antioxidant benefits. To make it an even healthier and more nourishing meal, I added turmeric powder. This is a power-packed rice dish with whole grains, turmeric, and black beans – truly everything good rolled into one! The black soybeans (Seoritae) can be enjoyed separately after cooking the rice, or you can simply top your rice with them.

Ingredients
  • 3 cups Rice (e.g., Brown or White)
  • 1 cup Mixed Grains
  • 1 handful Black Beans (Seoritae) (adjust quantity to your preference; enough to cover the surface of the rice cooker is usually fine)
  • 4 cups Water
  • 1/2 Tbsp Turmeric Powder

Cooking Instructions

Step 1

First, pre-soak the black beans. Rinse them thoroughly and soak them in plenty of water for at least 4 hours, or preferably overnight. Soaking makes the beans tender and easier to digest when cooked.

Step 2

Place the rice and mixed grains into the inner pot of your rice cooker.

Step 3

Add the water to the inner pot. Follow the water level markings on your rice cooker, considering the additional ingredients.

Step 4

Rinse the rice and mixed grains until the water runs mostly clear. This usually takes about 3-4 washes. Thorough rinsing removes excess starch for a better texture.

Step 5

Drain the washed rice and grains in a colander. Letting them air dry for about 20 minutes can help make the rice fluffier.

Add the drained rice and mixed grains to the rice cooker pot.

Pour in the water.

Add the turmeric powder to the water and stir well to dissolve it evenly. Let the rice mixture soak for about 40 minutes. This allows the rice to absorb the flavor and color of the turmeric.

Add the pre-soaked black beans to the rice cooker pot.

Place the inner pot into your electric pressure rice cooker.

Close the lid securely. Select the ‘White Rice’ or ‘Mixed Grains’ setting and press ‘Cook’.

Once the cooking is complete, carefully open the pressure cooker lid. Before mixing the rice, gently scoop out the black beans and set them aside. This keeps their shape intact.

Gently fluff and mix the turmeric black bean rice with a rice paddle. Ensure the golden color of the turmeric and the black beans are evenly distributed throughout the rice.
