Cooking Instructions

Step 1

First, let’s prepare the gardenia water, which is responsible for the beautiful yellow color of our sweet potato pancakes. Take 4-5 clean gardenia fruits. In a ceramic bowl, pour 1 cup (approx. 200ml) of water and add the halved gardenia fruits. Let it steep for about 10 minutes until a lovely orange-colored water is extracted. This process will give the sweet potato pancakes a more appetizing golden hue.

Step 2

Next, it’s time to prepare the sweet potatoes. Peel the sweet potatoes thoroughly, then slice them into pieces about 0.5 cm thick. Avoid slicing them too thinly so they have a pleasant texture when cooked and maintain their shape without falling apart.

Step 3

Now, let’s make the batter. In a large bowl, place 10-12 tablespoons of frying mix. Strain the previously prepared gardenia water using a sieve to collect only the clear liquid, then pour it over the frying mix. Discard the gardenia fruit pieces, using only the clear essence for color.

Mix the batter ingredients thoroughly. Stir until the frying mix and gardenia water are well combined and lump-free. You’ll achieve a beautiful yellow batter that’s a joy to behold! The ideal consistency is similar to thin soup, which will coat the sweet potato slices thinly and evenly, preventing the batter from becoming too thick.

Step 5

Add the sliced sweet potatoes to the prepared batter and gently mix them. Ensure each sweet potato slice is evenly coated with the batter. If the batter seems too thick, add a little more gardenia water; if it’s too thin, add a bit more frying mix until you reach the desired consistency.

Step 6

Heat a pan with a generous amount of sunflower oil over medium-low heat. Spoon portions of the battered sweet potato slices into the hot oil. Fry, flipping them occasionally, until they are golden brown on both sides. To check if the sweet potatoes are cooked through, insert a skewer into the center; if it goes in smoothly, they are done.
