Glistening Japanese Teriyaki Mackerel Simmered in Sauce
A Delicious Fish Dish: Shiny Japanese Teriyaki Mackerel, Perfectly Simmered
When you make extra eel sauce for grilled eel, you can also use it to make simmered mackerel! Simmered mackerel with teriyaki sauce has a distinct Japanese flavor, very different from typical Korean fish stews. It’s not spicy and has a lovely sweet and savory taste, making it a favorite among children. My youngest son, who has a ‘kid-friendly’ palate, absolutely loved it and even carefully removed the bones himself! (He usually doesn’t eat fish even if I debone it for him. 😊). I also enjoyed this unique dish after a long time. The subtle ginger aroma completely eliminates any fishiness, so even children who dislike fish can enjoy it. Main Ingredients
- 4 pieces of mackerel, prepared
- 5 cloves of garlic, minced
- A small amount of thinly sliced ginger
Simmering Sauce
- 5 Tbsp of prepared teriyaki sauce
- 1 cup of water (200ml)
- Chopped green onion, to taste
Homemade Teriyaki Sauce Base
- 12 Tbsp of store-bought teriyaki sauce
- 4 Tbsp of sake (or mirin)
- 4 Tbsp of ginger syrup
- 4 Tbsp of honey (or corn syrup)
- Pinch of black pepper
- 6 Tbsp of soy sauce
- 5 Tbsp of prepared teriyaki sauce
- 1 cup of water (200ml)
- Chopped green onion, to taste

Cooking Instructions
Step 1
First, let’s make the delicious teriyaki sauce. In a bowl, combine 12 Tbsp of store-bought teriyaki sauce, 4 Tbsp of sake, 4 Tbsp of ginger syrup, 4 Tbsp of honey, 6 Tbsp of soy sauce, and a pinch of black pepper. Step 2
Next, prepare the simmering sauce for the fish. Mix 5 Tbsp of the homemade teriyaki sauce you just made with 1 cup (200ml) of water. Add some chopped green onion to this mixture. (These are the ingredients listed under ‘Seasoning Sauce’ in this recipe.)
Step 3
Place the prepared mackerel pieces and the minced garlic into the simmering sauce. Bring the heat to medium-high and begin to simmer. Spoon the sauce over the mackerel occasionally to ensure it cooks evenly and absorbs the flavors.
Step 4
Once the mackerel starts to cook and the sauce begins to thicken, reduce the heat slightly. Continue to simmer until the fish is cooked through and the sauce has reduced to your desired consistency. Add the thinly sliced ginger strips towards the end of cooking. The fragrant ginger will effectively remove any fishy odors.
Step 5
