  • 3 bowls cooked rice
  • 1 potato
  • 1/4 carrot
  • 1/4 onion
  • 1/4 bell pepper
  • 1/4 green bell pepper
  • 10-15 cloves garlic
  • 50g canned corn (or 2-3 Tbsp)
  • 2 eggs

Cooking Instructions

Step 1

First, prepare the vegetables for your fried rice. Wash and peel the potato, carrot, onion, bell pepper, and green bell pepper. Dice them into small cubes, about 0.5 cm (diced). Feel free to use any leftover vegetables you have in your fridge! Zucchini, mushrooms, broccoli, or any other veggies you have on hand will work wonderfully to make a richer fried rice. Thinly slice the garlic cloves.

Step 2

Heat 3-4 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté until fragrant and lightly golden. Be careful not to burn the garlic; gently infusing the oil with its aroma is key. If you have the white part of a green onion, you can finely chop and sauté it instead of garlic to create a flavorful scallion oil.

Step 3

Once the garlic is fragrant, add all the diced vegetables (potato, carrot, onion, bell pepper, green bell pepper) to the pan. Increase the heat to medium-high and stir-fry quickly. Cooking over high heat for a short time helps maintain the vegetables’ crisp texture. Continue stir-frying until the potatoes start to soften.

Step 4

When the vegetables are almost cooked, add the 3 bowls of cooked rice and the canned corn (drained). Pour in 3 tablespoons of oyster sauce and stir well to combine all ingredients. You can adjust the amount of oyster sauce based on your preference and the amount of rice. If needed, season with a little salt or pepper.

Step 5

Finally, you can either scramble 2 eggs in the pan on the side and then mix them into the fried rice, or top the finished fried rice with a fried egg. Continue to stir-fry until everything is well combined and glossy. Your delicious vegetable fried rice is ready to enjoy!
