Main Ingredients
  • 120g fresh crown daisy
  • Plenty of cooking oil (for frying)

Crispy Batter
  • 1 cup tempura flour
  • 1/2 cup cornstarch or potato starch
  • 1 pinch of salt
  • 1 Tbsp cold cooking oil (for the batter)
  • Ice-cold water or very cold water (to achieve the right consistency)

Cooking Instructions

Step 1

First, wash the crown daisy thoroughly. Remove any tough or fibrous stems to ensure a tender bite. This preparation step helps to enhance the delicate texture and aroma of the crown daisy.

Step 2

In a large bowl, combine 1 cup of tempura flour, 1/2 cup of starch, and a pinch of salt. Mix them well. Add 1 tablespoon of cold cooking oil to the dry ingredients – this is a secret for extra crispy fritters! Now, gradually pour in ice-cold water or very cold water while whisking to create the batter. The amount of water needed will vary, so adjust it to reach the desired consistency.

Step 3

The batter should not be too thick; a slightly runny consistency, like a thin ribbon, is ideal. This thinner batter will coat the crown daisy lightly and evenly, resulting in a wonderfully crispy texture.

Step 4

Lightly dust the prepared crown daisy with a small amount of tempura flour. This initial dusting helps the main batter adhere better and prevents the coating from becoming too thick, ensuring a thin and crispy crust.

Step 5

Now, dip the dusted crown daisy into the batter, coating it thinly and evenly. Gently turn the crown daisy in the batter to ensure a light and uniform layer. Be careful not to overcoat, as too much batter can lead to a soggy result.

Step 6

Heat a generous amount of cooking oil in a deep pan to about 180°C (350°F). Carefully test the oil temperature before proceeding. Gently place the battered crown daisy pieces into the hot oil, one by one, making sure they don’t overcrowd the pan. Fry them until they turn golden brown and crispy.

Step 7

Your crown daisy fritters are ready when they achieve a beautiful golden-brown color and feel light and firm to the touch. Remove the fried fritters from the oil and place them on a paper towel-lined plate to drain any excess oil. Enjoy their fragrant aroma and delightful crispiness immediately!

Step 8

After frying the crown daisy, I used the remaining oil to make some sweet potato fritters as well! Frying multiple items at once is a great way to make the most of your preparation.
