Super Simple No-Oven Carrot Bread: A Healthy and Delicious Diet Snack!
I wanted to create a healthy bread recipe that’s great for little ones, so I decided to try making carrot bread easily in a rice cooker. Even without much added sugar, the natural sweetness of carrots is amplified by the aromatic cinnamon, making it incredibly delicious. This is especially recommended for those on a diet who might be hesitant about eating bread. It’s a healthy snack with a wonderfully soft texture and subtle sweetness.
Ingredients
- 150g All-purpose flour (or cake flour)
- 3 Large eggs (room temperature)
- 1 Carrot (approx. 130-150g)
- 30g Unrefined sugar (can be substituted with honey or agave syrup)
- 1g Salt (a pinch)
- 35g Brown rice oil or grapeseed oil (can be substituted with butter or coconut oil)
- 3g Baking powder (1 tsp)
- 2g Cinnamon powder (1/2 tsp, adjust to taste)
- 30g Raisins (optional, add as desired)
Cooking Instructions
Step 1
First, wash and peel the carrot, preparing about 130-150g. Finely julienne the carrot, or grate half of it and julienne the other half for a richer texture and flavor. In a large bowl, crack the 3 eggs. Add the vegetable oil (brown rice oil or grapeseed oil), unrefined sugar, and salt. Whisk gently with a whisk or fork until well combined. It’s important to mix well to eliminate any eggy smell.
Step 2
Sift the dry ingredients (flour, baking powder, cinnamon powder) together into the egg mixture at least twice. Sifting helps prevent lumps and incorporates air, leading to a softer bread.
Step 3
Using a spatula, gently fold the dry ingredients into the wet ingredients in a ‘figure 8’ motion. Avoid overmixing, as this can make the bread tough. Mix just until no dry flour streaks remain. Once the batter is partially mixed, gently fold in the julienned carrot and raisins. Mix a couple more times to incorporate everything evenly. You can also add chopped nuts at this stage for extra crunch.
Step 4
Lightly grease the inner pot of your rice cooker with butter or oil. This prevents the bread from sticking and ensures easy removal. Use a kitchen towel to spread the grease evenly across the bottom and sides.
Step 5
Pour the batter into the greased rice cooker pot and smooth the top surface. Select the ‘Steaming’ or ‘Cake’ mode (if your rice cooker has one) and set it for approximately 35 minutes. Cooking times and modes can vary by rice cooker, so refer to your appliance’s manual for the best results.
Step 6
Once the cooking cycle is complete, carefully remove the inner pot from the rice cooker. Invert the pot to release the bread onto a wire rack. Allow the carrot bread to cool slightly on the rack to let out steam. It’s best to slice it while still slightly warm for the softest texture.
Step 7

Store any leftover bread in an airtight container or zip-top bag in the freezer.
