Mussel Rice Ingredients
  • 1kg fresh mussels
  • Coarse salt (for cleaning mussels)
  • 2 fresh shiitake mushrooms
  • 2 cups short-grain rice (for cooking)
  • 500ml water (for boiling mussels)
  • 2 cups mussel broth (reserved from boiling)

  • 1/3 stalk green onion, finely chopped
  • 5 Tbsp soy sauce
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp red pepper powder
  • 2 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the rice for cooking. Rinse the 2 cups of rice under cold running water until the water runs clear. Then, soak the rice in water for 30 minutes. Soaking the rice ensures it cooks up fluffy and tender.

While the rice is soaking, prepare the mussels. Discard any mussels with broken shells or those that remain stubbornly closed. Gently pull off the ‘beard’ or byssus threads from the mussels. You can use kitchen scissors to snip them off for easier removal.

Now, it’s time to clean the mussels thoroughly. Add a handful of coarse salt to the mussels and rub them vigorously. This action helps to scrub away any grit or impurities attached to the shells. After scrubbing, rinse the mussels several times under cold running water until they are clean. Drain them in a colander.
