My son loves Donggeurangttaeng, and my husband adores stuffed pepper pancakes. I’ve created the ultimate recipe to make both these favorites simultaneously! Enjoy the tender, juicy Donggeurangttaeng and the crispy, flavorful stuffed pepper pancakes that will satisfy the whole family!
Donggeurangttaeng Ingredients
- 300g minced meat (pork, beef, or a mix)
- 1/2 block firm tofu (approx. 275g, water squeezed out)
- 1 small onion (finely minced)
- 1/3 carrot (finely minced)
- 2 handfuls of chopped green onions or scallions
- 1 Tbsp minced garlic
- A little minced chili pepper (for adults, omit for kids)
- A pinch of black pepper
- 2.5 Tbsp sesame oil
- Salt to taste (adjust seasoning as needed)
Stuffed Pepper Pancake Ingredients
- A portion of the Donggeurangttaeng mixture (set aside for kids)
- About 5-6 Korean green peppers (or other mild chili peppers), or bell peppers

Cooking Instructions
Step 1
Let’s start by making the beloved Donggeurangttaeng, a dish everyone enjoys! This recipe will take away your worries about side dishes for the kids.

First, wrap the tofu in a kitchen towel or cheesecloth and squeeze out as much water as possible. You can mash it with a fork or your hands, or use a food processor. Removing excess water is crucial to prevent the mixture from becoming too soggy.

In a large bowl, combine the squeezed tofu, 300g of minced meat, 2 handfuls of chopped green onions or scallions, 1/2 finely minced onion, and 1/3 finely minced carrot. Mincing the vegetables finely will improve the texture of the Donggeurangttaeng.

Next, add 1 Tbsp of minced garlic, a little salt for seasoning, 2.5 Tbsp of sesame oil for richness, and a pinch of black pepper. It’s best to season lightly at first and adjust later after tasting.

Meanwhile, lightly beat 2 eggs in a bowl. Also, prepare a plate with all-purpose flour or pancake mix for coating the Donggeurangttaeng and pepper pancakes.

Now, take spoonfuls of the Donggeurangttaeng mixture and shape them into flat, round patties. Avoid making them too thick, as this will take longer to cook through; aim for a thickness of about 1 cm. Neatly shape the edges to prevent them from spreading too much during cooking.
