Thinly sliced beef rolled around a colorful assortment of fresh vegetables, then lightly pan-fried to perfection. These Beef and Vegetable Rolls are as visually appealing as they are delicious. They make for an excellent, simple appetizer or can be a delightful addition to any special occasion, like a birthday dinner or when hosting guests. Main Ingredients
- 1 pack thinly sliced beef (for Bulgogi)
- 1/2 pack enoki mushrooms
- 1/2 onion
- 4 green onions (scallions)
- 4 sprigs of minari (water parsley)
- 5 perilla leaves (깻잎)

- Black sesame dressing, to taste

Cooking Instructions
Step 1
Prepare the filling ingredients for the beef rolls. Trim the base of the enoki mushrooms and thinly slice the onion. Cut the green onions into approximately 5cm lengths. You can also use minari (water parsley) or chives if you prefer. Adding perilla leaves will enhance the aroma.
Step 2
If using green onions instead of scallions, first cut them to about 5cm length. Then, starting from the white part, make lengthwise cuts down to the green part to create thin strips. This helps release more of the onion’s fragrance.
Step 3
Finally, trim the julienned green onions to your desired length of approximately 5cm. Your filling is now ready!
Step 4
Gently pat the thinly sliced bulgogi beef dry with paper towels to remove excess moisture. Spread the beef slices out flat. Since the beef is thin, you don’t need to marinate it separately; the sauces will provide plenty of flavor.
Step 5
Arrange the prepared vegetables (enoki mushrooms, onion, green onions) attractively on top of the spread-out beef slices. Be careful not to overfill, as this can make rolling difficult.

Roll the beef tightly around the vegetables, just like you would roll a kimbap (seaweed rice roll). Ensure the rolls are firm so they don’t unravel during cooking.

For an extra layer of aroma and flavor, you can add a halved perilla leaf on top of the beef before adding the vegetables and rolling. The fragrant perilla leaf will beautifully complement the beef and vegetables.

Your Beef and Vegetable Rolls, generously filled with fresh ingredients, are now ready to be cooked. Make sure they are rolled tightly to maintain their shape.

Lightly oil a preheated pan and place the beef rolls seam-side down. Cook over medium-low heat, turning gently and frequently to ensure all sides are evenly browned without burning.
