Main Ingredients
- 1 old-fashioned style sausage (approx. 150-200g)
- 1.5 onions (medium size)
- 5 Cheongyang peppers (adjust to your spice preference)
Batter Ingredients
- 5 ladles of pancake mix (approx. 1 cup)
- 200ml water (approx. 1 cup)
- 5 ladles of pancake mix (approx. 1 cup)
- 200ml water (approx. 1 cup)
Cooking Instructions
Step 1
First, prepare the old-fashioned sausage. Remove the casing and slice the sausage into approximately 0.5cm thick rounds. Then, finely mince them with a knife. Mince the sausage evenly without any protruding parts for a smoother batter consistency.
Step 2
Peel and wash the onions thoroughly. Similar to the sausage, finely chop them into about 0.5cm pieces. The sharpness and sweetness of the onions will enhance the flavor of the sausage pancakes. If you don’t prefer too much onion flavor, you can reduce the amount or use only the white parts.
Step 3
Remove the stems from the Cheongyang peppers and wash them clean. If you enjoy a spicy kick, keep the seeds in for a satisfying heat. If you want to reduce the spiciness, remove the seeds or use a milder pepper. Mince them finely.
Step 4
In a large bowl, combine the minced sausage, minced onion, and minced Cheongyang pepper. Add 5 ladles of pancake mix. You can also mix pancake mix with flour or starch for an extra crispy texture.
Step 5
Pour in 200ml of water. It might seem a bit thick at first. Mix well with chopsticks or a spatula, gradually adding water to reach the desired consistency. The batter should be slightly thick; if it’s too runny, the pancakes might break apart. (Adjust water slightly based on your pancake mix.)
Step 6
Heat a frying pan over medium-low heat and add a generous amount of oil. Using a ladle or spoon, scoop portions of the batter and place them onto the hot pan. Pan-fry until golden brown on both sides. Flip when the edges start to turn golden and the center appears cooked. Adding a little more oil during cooking will enhance crispiness.
Step 7
Once the sausage pancakes are nicely browned, drain off excess oil on a paper towel. Arrange them attractively on a serving plate. Enjoy them hot for the best crispy exterior and tender interior. Serve with soy sauce or ketchup for an enhanced flavor.
