  • Spaghetti Sauce (jarred)

  • 4 Mushrooms
  • 1/2 Bell Pepper

Step 1

First, gather all your pizza ingredients. Prepare the main vegetables like mushrooms, onion, and bell pepper, along with ham or sausage if you’re using them. Have your tortillas and spaghetti sauce ready. Feel free to add other vegetables you have on hand, such as corn or olives.

Step 2

Let’s start preparing the vegetables. Clean the mushrooms and slice the caps thinly, discarding the stems. Chop the bell pepper into bite-sized pieces, similar to how you’d prepare it for fried rice.

Slice the onion thinly. Lightly sauté it in a dry (no oil) non-stick skillet over medium heat to remove excess moisture. This enhances its sweetness and prevents sogginess. If using ham or sausage, briefly blanch it in boiling water to remove excess fat.

Now, let’s begin making the tortilla pizza. Heat a clean, non-stick skillet over medium-low heat. Place one tortilla in the skillet and toast it lightly for about 30 seconds to a minute until it’s slightly crisp.

Once the tortilla is warm, spread an even layer of spaghetti sauce over it. Be mindful not to use too much, as it can make the pizza too salty. Aim to leave about a 1cm border around the edge sauce-free.
