Delicious Zucchini Stew Recipe
Flavorful Zucchini Stew Without Meat!
A hearty zucchini stew made with just one zucchini! This recipe is incredibly delicious even without special seasonings or anchovy broth. Enjoy a wonderfully savory and refreshing stew.
Main Ingredients
- 1 zucchini
- 1/2 onion
- 1 Korean green chili pepper
- 1 red chili pepper
- 1 green onion
- 1 Tbsp minced garlic
Zucchini Seasoning
- 1 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp sesame oil
- 1 Tbsp soup soy sauce (guk-ganjang)
Stew Seasoning & Broth
- 1/2 Tbsp roasted soybean flour (konggaru)
- 1 Tbsp doenjang (fermented soybean paste)
- 1 Tbsp tuna extract (optional, for umami)
- 2.5 cups water (500ml)
- 1/3 Tbsp salted shrimp (saeu-jeot, for seasoning adjustment)
- 1 Tbsp gochugaru (Korean chili powder)

Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Cut it into large pieces, about 1 cm thick. In a bowl, combine the cut zucchini with 1 Tbsp gochugaru, 1 Tbsp soup soy sauce, and 1 Tbsp sesame oil. Gently massage the ingredients into the zucchini to season it well, and let it marinate for about 5 minutes.
Step 2
Heat a dry pot over medium heat. Add 1/2 Tbsp roasted soybean flour (konggaru) and roast it lightly until fragrant, being careful not to burn it. This adds a nutty depth. Next, add 1 Tbsp doenjang and sauté it with the konggaru to bring out its savory flavor. Finally, add 1 Tbsp tuna extract and sauté for another minute. Roasting the seasonings this way will result in a much richer and more complex flavor for your stew.
Step 3
Pour 2.5 cups (500ml) of water into the pot with the sautéed seasoning ingredients. Bring the water to a boil over high heat. Once boiling, add the marinated zucchini and thinly sliced onion. Reduce the heat to medium and let it simmer until the onion becomes translucent and the zucchini softens.
Step 4
Once the zucchini is tender, add the sliced Korean green chili and red chili peppers, along with the chopped green onion. Stir in 1 Tbsp of minced garlic to add a refreshing and slightly spicy kick. Finally, taste the stew and adjust the seasoning if needed with 1/3 Tbsp of salted shrimp (saeu-jeot). Simmer for another minute to allow all the flavors to meld together.
