Spicy Marinated Raw Crab Recipe by Ryu Su-young: A Perfect Rice Companion!

During the crab season, I bought some fresh crabs, steamed them, and stored the leftovers in the freezer. Using these, I decided to make Ganjang Gejang, a marinated raw crab dish, following the recipe from the TV show ‘Pyeonstorange’ by Chef Ryu Su-young. This recipe is perfect for transforming steamed crab into a delicious, spicy delicacy.

Crab Preparation
  • 500g frozen crab, thawed
  • Scrub brush (for cleaning crab)

Initial Rinse & Deodorizing Soak
  • 150ml water
  • 3 Tbsp vinegar

Cooking Instructions

Step 1

First, thoroughly scrub the crab shells with a brush under running water to remove any dirt. Trim off any hard or unsightly parts. You can also trim the legs to a more manageable size if desired. Rinse the prepared crab with clean water and drain well.

Step 2

In a bowl, combine 150ml of water and 3 tablespoons of vinegar. Mix well. Soak the cleaned crabs in this vinegar-water solution for about 15 minutes. This step is crucial for removing any unpleasant odor and ensuring the crab is fresh and clean.

Step 3

Now, let’s make the delicious marinade! In a mixing bowl, add 7 tablespoons of soy sauce, 4 tablespoons of fine gochugaru, 3 tablespoons of sugar, 1 tablespoon of minced garlic, 1/2 tablespoon of minced ginger, and the finely chopped green onion. Mix everything together thoroughly. Finally, add 1 tablespoon of vinegar for a touch of tanginess, and your flavorful marinade is ready!

Step 4

Gently lift the crabs out of the vinegar-water soak and lightly pat them dry. Place the crabs into the prepared marinade. Using your hands, gently toss and mix the crabs with the marinade, ensuring every part is well-coated. Be careful not to mix too vigorously, as this could break the crab shells.

Step 5

Arrange the beautifully marinated crab onto a serving plate. Sprinkle with toasted sesame seeds for extra flavor and nuttiness, and top with a bit of fresh chopped green onion for a vibrant garnish. Your delicious and visually appealing seasoned raw crab is now complete! Enjoy every bite!
