How to Make Delicious Japchae Perfect for Any Occasion

The harmonious blend of various vegetables and meat, along with the chewy texture of the glass noodles, is simply divine. This dish is a must-have for holidays and celebrations, and you can make it deliciously at home too.

Main Ingredients
  • 200g Pork (sliced for bulgogi or julienned)
  • 1 Onion (julienned)
  • 1/3 Carrot (thinly julienned)
  • 1 bunch Spinach (blanched, squeezed dry, and cut into 4-5cm lengths)
  • 1 pack Fish cakes or Ham (thinly julienned)

Noodles
  • 1 pack Glass noodles (approx. 200g)

Cooking Instructions

Step 1

Let’s stir-fry the vegetables and meat. First, lightly oil a pan and add 1 tablespoon of soy sauce and 1 teaspoon of sesame oil to create an aromatic base. Then, add the pork and stir-fry until cooked. Once the pork is done, add the onion, carrot, and fish cakes (or ham) in order, stir-frying each until tender. Be careful not to overcook; just stir-fry briefly until each ingredient is lightly seasoned. Set the stir-fried ingredients aside on a plate.

Step 2

Now, it’s time to cook the star of Japchae: the glass noodles! Fill a large pot with water and bring it to a boil. Once boiling, add 1 tablespoon of olive oil and 1/2 cup of soy sauce. This step prevents the noodles from sticking together, maintains their chewy texture, and gives them a lovely subtle brown color, making them more appetizing. Cook the glass noodles for about 7-10 minutes, or until they turn translucent and are cooked through. Drain the cooked noodles thoroughly in a colander.

Step 3

Finally, let’s combine all the ingredients and bring the flavors together. Place the drained glass noodles in the pan. Add the remaining soy sauce (from the 1 cup, minus the 1/2 cup used earlier), sesame oil, and a little more cooking oil. Stir-fry over medium heat until the noodles are glossy and well-coated with the sauce. This step is crucial for a beautiful sheen. Once the noodles are sufficiently stir-fried, add all the pre-cooked vegetables and meat back into the pan. Gently toss everything together to combine. Finish by sprinkling generously with toasted sesame seeds for a nutty aroma. Your delicious Japchae is complete! Serve it warm on a platter for a visually appealing presentation that will impress the whole family!
