How to Make Chinese Yousal at Home
Yousal, also known as ‘San Si’ in Chinese cuisine, literally means ‘shredded’. As the name suggests, all ingredients will be julienned for this dish. Let’s get started!
Main Ingredients
- Beef (marinated with bulgogi seasoning)
- Shrimp (briefly blanched in water)
- Squid (briefly blanched in water)
- Bok Choy (cut into bite-sized pieces)
- Chives (cut into bite-sized pieces)
- Mushrooms (such as shiitake, julienned)
- Spicy green chili (seeds removed and finely minced)
- Minced garlic
- Minced ginger
Seasoning and Slurry
- Cornstarch slurry (1 part cornstarch to 2 parts water, mixed)
- Soy sauce
- Oyster sauce
- Black pepper
- Sesame oil

Cooking Instructions
Step 1
First, prepare the main ingredients for the dish. Marinate the beef with bulgogi seasoning (soy sauce, sugar, garlic, pepper, etc.). Briefly blanch the shrimp and squid in boiling water after peeling and deveining them. This helps to remove any gamey odors and shortens the cooking time.
Step 2
Wash and julienne the vegetables like bok choy, chives, and mushrooms into bite-sized pieces. Bok choy, in particular, adds a delightful crunch and vibrant color, enhancing the overall flavor of the Yousal. Using a variety of mushrooms will add more depth to the taste.
Step 3
Prepare the cornstarch slurry that will be used to thicken the sauce. Mix 1 tablespoon of cornstarch with 2 tablespoons of water until smooth. Ensure there are no lumps for a silky texture. (Apologies, process photos were omitted!)
Step 4
Now, let’s stir-fry everything in order! Lightly oil a pan and sauté the minced scallions, garlic, and ginger until fragrant. Add the marinated beef and stir-fry until browned, then add the prepared shrimp and squid and cook together. Once the ingredients are mostly cooked, add a little water and season with soy sauce, oyster sauce, and pepper. When the sauce begins to boil, gradually add the cornstarch slurry while stirring until it reaches your desired consistency. Finally, add all the julienned vegetables and stir-fry briefly to maintain their crispness. Finish with a drizzle of sesame oil, and your delicious Yousal is ready!
